Where Did the Idea for Butternut Squash Mini Pizzas Originate?
I first learned of the idea for making mini pizzas with squash from…(wait for it, wait for it) my dentist. Yes, my wonderful dental office sends out an informative newsletter once a month, and the latest edition contained a recipe for eggplant mini pizzas. Unfortunately, I didn’t grow eggplant in my garden this year, but I did grow butternut squash. Would the same recipe work with butternut squash? Well, it turns out that this recipe will work with butternut squash and zucchini. I added the broiling technique to make the cheese melt more quickly, and voila! Keep in mind that you can substitute the words “eggplant” or “zucchini” in this recipe every place you see the words “butternut squash” if you have either of those vegetables on hand. Here’s the butternut version of this healthy, super-quick mini pizza recipe.

Equipment Needed for Butternut Squash Mini Pizzas
Baking sheet or pan
Butternut Squash Mini Pizza Ingredients
1 medium butternut squash
3 tablespoons olive oil
1 teaspoon granulated garlic
1 teaspoon salt
1 teaspoon pepper
8-12 cherry or grape tomatoes, sliced
1 cup grated mozzarella cheese
2 teaspoons dried oregano
2 teaspoons dried basil
Parmesan cheese (optional)
Other optional toppings such as mushrooms, ham, or pepperoni
Butternut Squash Mini Pizza Instructions
Preheat the oven to 350 degrees. If the skin of the butternut squash appears to be tough, peel it with a vegetable peeler. Slice the squash into 1/2 inch thick slices. Place the slices on a baking sheet. Drizzle olive oil on top of each slice. Using the back of a spoon, spread the olive oil around on the slices so they are covered with oil to the edges. Sprinkle on the garlic, salt, and pepper. Bake for 20 minutes.
When 20 minutes have passed, take the baking sheet out of the oven and turn the oven to broil. My oven has a low and a high broil setting. Choose the low broil setting for this recipe, if you have the option. Top the mini pizzas with the sliced tomatoes and any other optional topping (such as mushrooms or ham). Sprinkle on the mozzarella cheese. Finally, sprinkle on the oregano and basil.
Return the mini pizzas to the oven and broil for 5 minutes. The cheese should get nice and melty. Remove the pan from the oven and place mini pizzas on plates to serve.

To Peel or Not to Peel
Do you always have to peel squash or eggplant before using in this mini pizza recipe? Not always. Sometimes, especially with eggplant and zucchini, the skin is thin and soft. My problem is that I usually don’t pick the squash until it is quite large, so sometimes the peel is tough. For this recipe, I did peel the butternut squash.
Quick Tip for Leftover Butternut Squash Slices
You might want to make this keto pizza on more than one night. If that is the case, just slice up the whole butternut squash and store the leftover slices in the refrigerator. A nice covered bowl is perfect.
Can You Use the Squash Slices with Seeds?
If you are making zucchini mini pizzas or butternut squash pizzas, you will have some squash sliced with seeds. You don’t need to worry about slices with seeds when you make eggplant mini pizzas. When I first made this recipe, I wasn’t sure if the slices with seeds would hold the toppings during broiling, but they were fine. The cooked seeds actually added a nice texture to the low carb pizzas. Being able to use the whole squash means that this recipe fits in nicely with my plan to make good use of an abundant squash harvest.
Which Cheese is Best for Butternut Squash Pizza?
For this butternut squash pizza recipe, I just stuck with mozzarella. If you buy the pre-grated kind, you can save some time. Some people like to put a bit of ricotta cheese on their butternut squash pizza. If you wish, you may also add a sprinkle of Parmesan cheese after baking.
What Toppings Can You Put on Butternut Squash Pizza?
For this keto crustless pizza, you can add a variety of toppings. In my family, the guys prefer meat on their pizzas. It’s very easy to add chopped ham, pepperoni or cooked Italian sausage when you are topping the fast keto pizza with tomatoes. You can also add sliced olives, mushrooms, or other fresh vegetables you think of.
