For this easy milk chocolate toffee recipe, you will need:
1 2 to 3-quart nonstick saucepan (larger is better because of splatters)
1 rimmed baking sheet at least 12 by 18 inches in size
1 long-handled wooden spoon (the longer the handle, the more splatters will be avoided)
Ingredients for Milk Chocolate Toffee Candy
What is toffee made of? It’s always amazing to me how many kinds of candy can be made out of different combinations of butter and sugar. When making candy, the process is just as important as the ingredients. Just a little variation in the amount of time spent cooking the candy will make a huge difference in the end result. You could have soft, chewy candy or hard, brittle candy with just a few minutes adjustment in cooking time. The ingredients for toffee are quite simple.
2 cups butter (4 sticks, and only real butter will work in this recipe)
3 tablespoons water
2 cups granulated sugar
3/4 teaspoon vanilla
1/2 teaspoon salt
10-12 ounces milk chocolate chips (1 bag)
3/4 cup slivered, toasted almonds or chopped pecans (optional)
Instructions for Milk Chocolate Toffee Candy
If you are toasting the almonds, preheat the oven to 350 degrees. Line a rimmed baking sheet with foil. Place the 3/4 cup of almonds on the baking sheet and bake for 5 minutes. When the time is up, remove the pan from the oven and set aside.
In a large nonstick skillet or saucepan combine butter, water, sugar, vanilla and salt.
Melt over medium-high heat, stirring constantly and rapidly. Some recipes advise to brush down the sides of the pan with a wet brush periodically, but there is no need with a nonstick saucepan. I’m always too busy stirring to have time to brush down the sides anyway. Continue cooking and stirring until the mixture starts to turn tan. The darker the color, the more brittle the toffee will be. The darkness is up to you. Just be careful not to scorch the mixture. When I last made this, I paid special attention to the color, and I cooked my toffee until it was about the color of peanut butter.
Remove the saucepan from the heat and pour immediately onto the foil-lined rimmed baking sheet. The hot mixture will go on top of the nuts, if you are using them.
Immediately sprinkle with milk chocolate chips. When the milk chocolate starts to look glossy, spread it with a spatula.
Let the milk chocolate toffee cool for 8 hours. Break it into chunks and store in an airtight container.

If you made the milk chocolate toffee without nuts, the room temperature shelf life may be as long as eight months.
