Visits to the home of my Canadian grandparents were highlights of my youth. I have many fond memories of walking to the corner bakery to purchase sausage rolls. As an adult, whenever travels took me to Canada, I always made an effort to pick up sausage rolls from the grocery store. I have often wondered why American grocery stores and bakeries don’t offer sausage rolls as an option. They are such a handy, portable snack or meal. I could eat them for days. Years ago, I tried making them by creating the crust from scratch. The resulting sausage rolls were messy, unattractive, and not very tasty. Recently, I was thrilled to stumble across an easy recipe from Australia. The problem? The measurements, from the quantity of sausage to the oven temperature, had to be adapted to fit American measures. It took a bit of experimenting, but here’s the result. I hope you’re pleased!

Mini Sausage Rolls Recipe Equipment

To make this easy mini sausage rolls recipe, you will need mainly basic kitchen equipment like measuring spoons and a mixing bowl. To make the recipe truly simple and frustration-free, you will also need:

1 rimmed baking pan (The 13 by 18-inch size is ideal)

 

1 silicone baking liner or parchment paper (This one is exactly like the one I have.)

 

1 serrated knife (It doesn’t have to be large. One about 5 to 6 inches long works well, like this one.)

 

1 large cutting board for rolling out the puff pastry and cutting the rolls into small pieces

 

1 pastry brush

Paper towels

Mini Sausage Rolls Recipe Ingredients

You can use regular ground pork, ground sausage, or spicy ground sausage in this recipe. The seasonings included on the ingredients list add savory flavor no matter which type of ground pork you decide to use. The added Worcestershire sauce, Dijon mustard and ketchup help give the sausage a slightly softer consistency for filling the puff pastry. Here are the ingredients you’ll need for mini sausage rolls with puff pastry:

1 pound ground pork, ground pork sausage, or ground pork spicy sausage

2 tablespoons dried, minced onion

1 teaspoon beef soup base or beef bouillon

1 and 1/2 teaspoons ketchup

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

2 sheets puff pastry, thawed (I used Pepperidge Farm brand.)

1 egg

1 tablespoon milk

Preheat the oven to 375 degrees. In a large bowl, combine the sausage, minced onions, bouillon, ketchup, Worcestershire sauce and mustard. Mixing with your hands is messy, but it’s the quickest way to combine the ingredients thoroughly.

Place the sheets of puff pastry on the cutting board and cut each sheet in half. Place one fourth of the sausage mixture down the long side of each puff pastry sheet half in a log shape.

Mix the egg and milk in a small bowl. Brush the egg mixture along the length of the puff pastry sheet on one side of the sausage mixture.

How do you wrap pastry for sausage rolls? Starting with the sausage side of the puff pastry sheet, roll up each sheet and press the edge to seal. Brush the top of each roll with the egg mixture.

Use a small serrated knife to cut each log into 8 pieces. I like to start by cutting each log in half, then each half in half, then each quarter in half. That way, your pieces will be the same size. You will end up with 32 mini sausage rolls.

Transfer each piece to a baking pan lined with a silicone liner or parchment paper. Place the pieces an inch apart. Bake in the oven for 30 minutes, until the tops are golden brown.

When you remove the pan from the oven, immediately transfer the mini sausage rolls to a tray or platter lined with paper towels. This will help keep the pastry from getting too soggy on the bottom. You can remove the paper towels after a few minutes, after the grease has been absorbed.

Serve the mini sausage rolls warm if desired. Mustard, barbecue sauce, or any other favorite dipping sauce is great to serve alongside your mini sausage rolls. Watch out! They might disappear quite quickly if left unattended.

Can you eat mini sausage rolls cold? Yes! They are delicious served cold as well. If you are making the mini sausage rolls to take on a picnic, let cool, then pack in a cooler or store (covered) in the refrigerator. Mini sausage rolls are great served cold as well.

Why is the bottom of my puff pastry soggy? This happens when the grease from the sausage seeps down into the puff pastry as the sausage rolls are baking. Here is how to stop soggy bottom sausage rolls. To keep your puff pastry from getting soggy on the bottom, try this: After baking, quickly remove the cooked sausage rolls onto a tray lined with paper towels. After a few minutes, when any extra grease has been absorbed, remove the paper towels. Transfer the mini sausage rolls to a different tray for serving, if desired.

Some people place uncooked mini sausage rolls on a baking tray and place the tray in the freezer for 5 minutes before baking. This will cause the bottom of the pastry to harden. Although this might be effective, you may also have to adjust the baking time. Check the mini sausage rolls after 30 minutes of baking, and add 5 more minutes if necessary.

How do you assemble sausage rolls?

Getting the sausage mixture into a log shape on the pastry may be done in a few different ways. If your sausage mixture is quite loose, you can place one-fourth of the mixture into a sturdy, quart-sized zipped bag, then snip off one corner of the bag. You can reinforce the corner of the bag with packing tape if you like. Squirt the sausage mixture along the length of the puff pastry. This method goes fairly quickly, but is a bit messy. Repeat for each puff pastry sheet.

Another way to place the sausage into a log shape on the puff pastry is to take one fourth of the mixture and roll it back and forth between your hands until an elongated roll is formed. Place the elongated sausage log onto the puff pastry, then stretch and shape to fit. 

Still another way to get the sausage mixture into a log shape is to spoon the sausage mixture a bit at a time onto the puff pastry in small mounds. Once you have one fourth of the sausage mixture lined up down the length of the puff pastry sheet, you can shape the mounds into a log.

The method you choose to assemble the sausage roll depends on the consistency of the sausage mixture. My favorite fast method is rolling the mixture between my hands, but if your sausage mixture is too loose, it might fall apart when rolling this way. The more mini sausage rolls you make, the speedier you will become at assembling the rolls.

Do you put egg in sausage roll mix?

In this recipe, egg is mixed with milk and brushed on the pastry to help form a seal. The egg wash also gives the puff pastry a nice golden color when baked. Egg is not used in the sausage mixture in this recipe, but there are other fillings for sausgaeg rolls you might want to try. If you decide to use a meatloaf mixture as your sausage filling, many meatloaf recipes, such as bacon-wrapped meatloaf, do have egg in them.

Can you prepare sausage rolls the night before?

You could certainly mix the sausage mixture the night before. If you placed the sausage on the puff pastry and rolled it up the night before, stop at the point where you need to put on the egg wash. This means that you would still have to apply the egg wash on the top and cut the rolls into bite-sized pieces on the day of baking them.

How do you know if a sausage roll is cooked?

Since these mini sausage rolls are so small, the best way to judge doneness is by checking to see if the pastry has turned a nice golden color. By the time this happens, the sausage will be cooked through. If you would like to test one to make sure, you can always take one out of the oven and break it apart to check the center. Once you have made these mini sausage rolls once, you will know just how much time is needed in your oven for the mini sausage rolls to be cooked to perfection.

Should sausage rolls be frozen cooked or uncooked? You can freeze both cooked and uncooked mini sausage rolls. If you are freezing uncooked sausage rolls, cut into the bite-sized pieces before freezing. Place on a tray in the freezer, uncovered. Once the rolls are frozen, you can pack them into a bag or box. When you are ready to eat them, simply thaw them in the refrigerator and then bake them according to the original recipe. If you want the puff pastry to have a nice golden color, you can to the egg wash on the individual mini sausage rolls before baking.
