My most recent duty station in the morning was greeting students as they entered the building on the way to their classrooms. They would always be very excited when they came in bearing a tray with school breakfast pizza. Even though I had already had my breakfast, the school breakfast pizza looked very tempting. I decided to investigate and figure out how to make it at home. Here’s the result. I hope you’ll enjoy making it!

The most essential piece of equipment you will need for making school breakfast pizza is a sheet pan. Here’s a set of two, just in case you want to make a double batch of school breakfast pizza to feed a crowd.

If you choose to make the pizza dough from scratch using a bread machine, then you will, of course need a bread machine. Here’s one that is similar to mine, which I love using for making dough for pizza and homemade rolls. It’s got all of the features you need to make dough, which is what really saves a lot of time for me.

Ingredients for School Breakfast Sausage Pizza

What is school breakfast pizza made of? Here are the simple ingredients for the sausage school breakfast pizza. The recipe lists ingredients for homemade pizza crust dough. If you choose, you may substitute the first eight ingredients with a refrigerated pizza crust dough to make the recipe even easier. You may also choose to buy prepared pizza sauce instead of making the sauce from scratch. You may certainly customize it by varying the cheese and other toppings. The school breakfast pizza where I work is topped with turkey sausage rather than pork sausage, which is another consideration if you are trying to replicate your child’s favorite school breakfast pizza.

1/4 cup water

1 tablespoon oil

1 teaspoon lemon juice

1/2 teaspoon salt

1 tablespoon sugar

1 tablespoon dry milk

2 1/4 cups flour

1 teaspoon active dry yeast

1/2 to 1 pound ground breakfast sausage, like Jimmy Dean brand (You can also use ground turkey sausage.)

1 small onion, chopped (optional)

1/2 green bell pepper, chopped (optional)

1 6-ounce can tomato paste

1 15-ounce can tomato sauce

2 teaspoons dried oregano

1 teaspoon dried basil

1 teaspoon sugar (optional)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1-2 cups grated mozzarella or cheddar cheese or a mix

1/2 cup sliced mushrooms (optional)

1/2 cup chopped green onions (optional)

Directions for School Breakfast Sausage Pizza

Combine the first eight ingredients in a bread machine and start the dough-making cycle. If you are using refrigerated pizza crust dough, skip this step.

Brown the sausage with the onion and green pepper, if using. Drain and set aside until needed, or refrigerate if making pizza dough from scratch.

Grease two 18 by 13-inch baking sheets (size may vary, that’s okay). Preheat oven to 425 degrees if using refrigerated pizza crust dough. If making dough in the bread machine from scratch, preheat oven when the dough is prepared to spread in the pans.

Spread dough in pans until it reaches the edges, or as close as you can come to the edges. Mix pizza sauce if using homemade. (You may have some sauce left over if you are just making one school breakfast pizza.) Spread pizza sauce over dough up to about 1/2 inch from the edge of the crust.

Sprinkle the cooked sausage mixture over the top of the sauce. Sprinkle cheese over the top of the sausage mixture. Bake in the oven for 20-25 minutes. If baking two pizzas, exchange the top and bottom pizza about half way through the baking time so both get cooked evenly on top.

When pizza comes out of the oven, slice and serve. Each sheet will make about 16 rectangular slices of school breakfast pizza. There are 218 calories in one slice of school breakfast sausage pizza. This recipe definitely makes enough to feed a crowd, and would be the perfect breakfast for large gatherings.

Pizza Dough in the Bread Machine

  • ¼ cup water
  • 1 tablespoon oil
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon dry milk
  • cups flour
  • 1 teaspoon active dry yeast

Ground Meat Mix

  • ½ to 1 pound ground breakfast sausage
  • 1 small onion, chopped optional
  • ½ green bell pepper chopped

Pizza Sauce

  • 1 6-ounce can tomato paste
  • 1 15-ounce can tomato sauce
  • 2 teaspoons dried oregano

Doubling the School Breakfast Pizza Recipe

To double the school breakfast pizza recipe, make sure you use 1 pound of sausage. For the homemade dough in the bread machine, use 1 and 2/3 cups water, 2 tablespoons oil, 1 teaspoon lemon juice, 1 teaspoon salt, 2 tablespoons sugar, 2 tablespoons dry milk, 4 and 1/2 cups flour, and 2 teaspoons active dry yeast. The time to make the dough in the bread machine will remain the same.

Gluten-Free School Breakfast Pizza

To make this school breakfast pizza gluten-free, just substitute an all-purpose, gluten-free flour. The rest of the recipe can remain the same. It’s great that there are so many gluten-free flour options available.

In a Hurry? Make These Substitutions

If the list of ingredients looks too long, and you are looking for the easiest possible way to make school breakfast pizza, just make some easy substitutions. Use refrigerated pizza crust dough. Buy some premade pizza sauce. You can also brown the sausage (with optional chopped onion and green pepper) ahead of time, freeze, then thaw when needed. That would make a super simple holiday breakfast idea.

Tips for Making the School Breakfast Pizza Dough From Scratch

If you are looking for an easy holiday breakfast meal, obviously the refrigerated pizza dough is the simplest option. You could always get up a couple of hours before everyone else in order to make the dough in the bread machine, but who wants to do that? The other option is to make the dough the day before and store it in the refrigerator. Take it out of the refrigerator the morning you need it, let it come to room temperature, then spread it in the pans. You could brown the sausage while the dough is warming, or you could even cook it the day before as well. That way, all you have to do in the morning is put the pizza together and pop it in the oven. If you use refrigerated dough from a can, that’s what you would do as well.

Other School Breakfast Pizza Topping Variations

There are many ways you can customize school breakfast pizza to suit your tastes. You can vary the meat you use, substituting ground turkey sausage for ground pork sausage. You could add mushrooms or green onions. If you really wanted the breakfast pizza to seem like a breakfast, you could add some scrambled eggs. My school secretary has done this and was pleased with the results. Tomatoes are another possible topping variation. There are many possibilities!

Frozen School Breakfast Sausage Pizza

If you are extremely short on time, you can buy a frozen version of school breakfast pizza. Actually, the breakfast pizza the kids get at school is frozen, and it comes from a food service company. I talked to the school cook, and the brand they use is Tony’s, but it may not be available for delivery in your area. The frozen breakfast pizzas I found that are available to regular people, not through a food service company,  are individually wrapped, round, with bacon and eggs on top. Your best bet is to make school breakfast pizza at home, then slice into individual portions and freeze. You can thaw and quickly reheat the individual slices as needed. You can customize the school breakfast pizza when you make it and add whichever toppings you like. Far better!
