- 1 pound ground pork sausage
- 1 medium onion
- 2 5 ounce boxes cheddar cheese croutons or seasoned croutons
- 2 cups grated cheddar cheese
- 4 eggs
- 2 cups milk
- ½ teaspoon dry mustard
- 1 can cream of mushroom soup
- ½ cup salsa
Preheat the oven to 300 degrees.
Grease a 9 by 13-inch casserole dish.
Chop the onion.
Put the chopped onion and the sausage in a skillet. Brown the onions with the sausage and drain excess fat, if any.
Line the bottom of the casserole dish with croutons.
Layer sausage on top, then cover with cheese.
Beat eggs, milk, and mustard together in a bowl.
Pour over the top of the casserole. Refrigerate overnight or for 8 hours.
Before baking, mix soup with 1/2 cup of salsa. Smooth over the top of the casserole.
Bake for 1 and 1/2 hours or more until bubbly.
