Ingredients
  

  • 1 pound ground pork sausage
  • 1 medium onion
  • 2 5 ounce boxes cheddar cheese croutons or seasoned croutons
  • 2 cups grated cheddar cheese
  • 4 eggs
  • 2 cups milk
  • ½ teaspoon dry mustard
  • 1 can cream of mushroom soup
  • ½ cup salsa

Instructions
 

  • Preheat the oven to 300 degrees.
  • Grease a 9 by 13-inch casserole dish.
  • Chop the onion.
  • Put the chopped onion and the sausage in a skillet. Brown the onions with the sausage and drain excess fat, if any.
  • Line the bottom of the casserole dish with croutons.
  • Layer sausage on top, then cover with cheese.
  • Beat eggs, milk, and mustard together in a bowl.
  • Pour over the top of the casserole. Refrigerate overnight or for 8 hours. 
  • Before baking, mix soup with 1/2 cup of salsa. Smooth over the top of the casserole.
  • Bake for 1 and 1/2 hours or more until bubbly.
