Equipment

Ingredients
  

  • 1 10-inch graham cracker pie crust store-bought is fine
  • 1 cup blueberries
  • 1 cup water divided
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch

Filling

  • ½ cup powdered sugar
  • 6 ounces cream cheese at room temperature
  • 2 cups Cool Whip softened
  • 1 teaspoon vanilla

Instructions
 

  • For the topping, place blueberries and the water in saucepan and simmer for 3 minutes.
  • In a small bowl, mix together sugar and cornstarch, then add 1/3 cup water.
  • Combine this with the blueberries and boil for 1 minute, stirring constantly.
  • Remove from heat and allow to cool while you make the filling.
  • For the filling, blend powdered sugar, vanilla, and cream cheese until smooth.
  • Add Cool Whip and blend until smooth.
  • Spread in pie shell and cover with slightly cooled blueberry topping.
