1 10-inch graham cracker pie crust store-bought is fine 1 cup blueberries 1 cup water divided 1 cup granulated sugar 3 tablespoons cornstarch Filling ½ cup powdered sugar 6 ounces cream cheese at room temperature 2 cups Cool Whip softened 1 teaspoon vanilla
For the topping, place blueberries and the water in saucepan and simmer for 3 minutes.
In a small bowl, mix together sugar and cornstarch, then add 1/3 cup water.
Combine this with the blueberries and boil for 1 minute, stirring constantly.
Remove from heat and allow to cool while you make the filling.
For the filling, blend powdered sugar, vanilla, and cream cheese until smooth.
Add Cool Whip and blend until smooth.
Spread in pie shell and cover with slightly cooled blueberry topping.
