Ingredients
  

  • 3 cups grated zucchini
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups firmly packed brown sugar
  • 1 tablespoon vanilla
  • 4 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease two 9-by-5-inch loaf pans.
  • Grate 3 cups of zucchini or use frozen zucchini shreds.
  • Place freshly grated or frozen zucchini shreds in a colander in the sink, wrapped in several layers of paper towels. Press out the moisture in the zucchini and set aside.
  • Beat eggs in a large mixing bowl. Add oil and brown sugar; beat well. Stir in vanilla and zucchini.
  • Combine flour, salt, baking soda, baking powder, cinnamon, nutmeg and cloves. Add to zucchini mixture and beat well. Stir in chocolate chips.
  • Pour into prepared pans and bake about 1 hour or until toothpick inserted in center comes out clean.
