Equipment

  • 1 large skillet
  • 1 Covered casserole dish
  • 1 Wooden spoon
  • Measuring cups and spoons

Ingredients
  

  • 1 cup milk optional, for soaking
  • 1 pound sliced beef liver
  • 1 medium onion sliced and separated into rings
  • 4 tablespoons butter divided
  • salt and pepper to taste
  • 2 teaspoons water
  • 2 teaspoons lemon juice bottled is fine
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons flour
  • 1 cup beef broth

Instructions
 

  • Soak liver and onions in milk in a mixing bowl in the refrigerator for 30 minutes (optional)
  • While the liver is soaking, slice the onion into rings.
  • In a large skillet, melt two tablespoons of butter. Cook onions in butter over medium-high heat until tender, but not brown.
  • Remove onions from the skillet and place them in a covered casserole dish.
  • If you chose to soak the liver, remove it from the refrigerator, rinse, drain, and pat dry.
  • Turn the heat down to medium and add liver to the skillet. Sprinkle with salt and pepper.
  • Cook for three minutes, then turn the liver over and return the onions to the skillet.
  • Cook for two or three more minutes until the liver is slightly pink in the center.
  • Remove the liver and onions from the skillet. Place in the covered casserole dish.
  • Stir water, lemon juice, and Worcestershire sauce into the pan drippings.
  • Add two tablespoons of butter and two tablespoons of flour. Mix together to make a roux.
  • Stir in one cup of beef broth. Mix and stir until thickened and bubbly.
  • Return the liver and onions to the skillet to warm in the gravy. You can serve the liver and onions in the skillet or return the liver, onions, and gravy to the casserole dish to serve. Enjoy with mashed potatoes or rice.

Notes

The time for this recipe includes the optional soaking time for the liver. If you choose to omit the soaking, the prep time would be reduced to 10 minutes, making the total time for this recipe just 30 minutes, if you're in a hurry.
