- 2 pounds red skin potatoes
- 3 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon minced garlic
- 2 teaspoons dried rosemary or 2 tablespoons fresh, chopped
