Why I Love Blueberry Cream Cheese Pie

My dad’s favorite pie was a marionberry cream cheese pie we used to be able to order from Shari’s restaurants here in Oregon. Sadly, all of their Oregon locations are now closed, but that hasn’t stopped us from enjoying a version of their delicious pie. Since I don’t grow marionberries (a type of blackberry hybrid developed in Oregon), but grow lots of blueberries, I adapted a recipe to make blueberry cream cheese pie. This simple pie recipe may be made with fresh or frozen blueberries, and if you purchase a graham cracker pie crust from the store, there is no baking involved. Here’s my easy blueberry cream cheese pie recipe for you to enjoy!

Blueberry Cream Cheese Pie Equipment

To make this easy no-bake pie recipe, a stand mixer is nice to have, but not a necessity. I am lucky enough to still be using my late mother-in-law’s lovely gold KitchenAid mixer. It’s still going strong after decades of use. I highly recommend KitchenAid mixers to anyone who enjoys cooking or baking.

You will also need some basic kitchen equipment like measuring spoons, measuring cups, a spatula for spreading the filling, a small bowl, a medium-sized saucepan, and a wooden spoon for stirring the sauce while it heats.

1 10-inch graham cracker crust, baked (purchased pie crust is fine, or you can make your own)

For the topping:

1 cup blueberries

1 cup water, divided

1 cup granulated sugar

3 tablespoons cornstarch

For the filling:

1/2 cup powdered sugar

1 6-ounce package cream cheese, at room temperature

1 teaspoon vanilla

2 cups softened Cool Whip

If you decide you want to make your own graham cracker pie crust, here are the simple ingredients for a 10-inch crust:

1 ½ cups (about 10–12 sheets) graham cracker crumbs

⅓ cup granulated sugar (or ¼ cup for less sweetness)

6 tablespoons unsalted butter, melted

A pinch of salt (optional)

For the sauce, place blueberries and the water in saucepan and simmer for 3 minutes. In a small bowl, mix together sugar and cornstarch, then add 1/3 cup water. Combine this with the blueberries and boil for 1 minute, stirring constantly. Remove from heat and allow to cool while you make the filling.

For the filling, blend powdered sugar, vanilla, and cream cheese until smooth. Add Cool Whip and blend until smooth. Spread in pie shell and cover with slightly cooled blueberry sauce.

Directions for Homemade Graham Cracker Pie Crust

Here are the easy steps if you would prefer to make your own graham cracker pie crust:

Preheat your oven to 350°F (175°C).

Crush graham crackers into fine crumbs using a food processor or by placing them in a resealable plastic bag and crushing with a rolling pin.

Measure 1 ½ cups of crumbs.

In a medium bowl, combine the graham cracker crumbs, sugar, and a pinch of salt (if using).

Stir in the melted butter until the mixture resembles wet sand.

Transfer the crumb mixture into a 10-inch pie pan.

Use your hands or the bottom of a flat glass or measuring cup to press the crumbs firmly and evenly onto the bottom and up the sides of the pan.

Place the crust in the preheated oven and bake for 8–10 minutes, or until it’s lightly golden and set.

Remove from the oven and let it cool completely before adding your filling.

Once the crust is cool, fill it with your favorite pie filling, whether no-bake or baked.
