Since this easy recipe for bread machine rolls is designed for the bread machine, you do need a bread machine for the recipe. There is no need to spend a huge amount of money on one that has a lot of fancy bread-making features. If you intend to use a bread machine mainly for dough-making, as I do, then this one by Crownful is a great bargain. Since the baking pan is non-stick, you could easily bake bread in it, if you wish. There are even three settings for the crust color.
Other equipment for this bread machine roll recipe includes a cutting board or breadboard, a sharp knife, a baking sheet, and a cloth to cover the rolls when they are rising.
Ingredients for This Recipe for Bread Machine Rolls
1 and 1/3 cup egg plus water (I give directions below for how to measure this.)
1 teaspoon lemon juice
4 cups flour
1 1/2 teaspoon salt
1/4 cup sugar
1/4 cup oil
2 teaspoons active dry yeast

Get out the bread machine and remove the baking compartment. I never leave the removable bread pan in the machine when I add ingredients. I wouldn’t want to spill any ingredients inside the machine. The bread pan from my machine resembles a sort of bucket and is easy to remove from the machine using its attached handle.
Break the egg into a liquid measuring cup. Add water to the one cup mark. Pour the water and egg into the bread pan, then add the remaining 1/3 cup water. Add the rest of the ingredients in the order listed. This is important, because you do not want the yeast to come into contact with the liquid ingredients.
Place the bread pan back in the machine and use the Dough setting. On my machine, the dough-making process takes one hour and thirty minutes from start to finish.
When the process is complete, remove the dough from the bread pan and place it on a lightly-floured surface. I use my trusty old bread board, which came with our old kitchen cabinets. We no longer have the cabinets in our kitchen, but I still use the sturdy bread board for my bread machine roll recipe and many other things.
Grease a baking sheet (for my economical pan-greasing method, check out my easy cornbread recipe). Using a large kitchen knife, cut the dough in half, divide each of those pieces in half, then divide each of those pieces in half until you have eight pieces of dough. Cut each dough piece into three smaller pieces so you have 24 total. Flatten each piece into an oval, then fold in half. This makes it easy to open the roll after baking to add a nice bit of butter, if you like. Place the shaped rolls onto the greased baking sheet about 1/2 inch apart and cover with a lightweight cloth.
Let the covered dough for the bread maker dinner rolls rise in a draft-free, warm place for 30 minutes. The dough should double in size. While the dough is rising, preheat your oven to 350 degrees. Bake the rolls for 20 minutes or until golden brown. Enjoy!
