How to Make Hat-Shaped Tea Sandwiches
Tea sandwiches make excellent hat-themed party food. You can cut bread into circles and decorate to resemble tiny hats. Here’s one example, made with wheat bread, egg salad, lilac blossoms, and chives. The quantity of ingredients given below is enough to make 8 hat-shaped egg salad sandwiches.
Equipment
1 1-and-1/2-inch diameter round cookie or biscuit cutter
1 2-inch diameter round cookie or biscuit cutter
Scissors for snipping chives and lilac blossoms
1 small bowl for mixing egg salad
1 pastry blender (optional) for chopping the egg for the egg salad
1 teaspoon for spreading the egg salad filling onto the bread
Ingredients
4-8 small lilac blossoms, snipped off right below the bloom
16 pointed chive stem ends, cut to about 1 inch in length
4 large slices of bread (I used wheat to resemble brown straw hats)
1 hard-boiled egg
1 tablespoon mayonnaise (more or less to taste)
Seasonings for flavor, like curry or dried minced onion (optional)
Instructions
Snip the lilac blossoms and chives. Gently rinse and allow to dry.
Chop the egg and mix it with the mayonnaise. Add seasonings, if desired.
Cut circles into bread (see picture for arrangement). You should be able to fit 2 large and 2 small circles on each slice. (I like to freeze the scraps and use them in homemade bread stuffing.)
Spread egg salad onto the small circles. Lay snipped chives on the large circles (see photo).
Top the large circle with the small circle, sandwiching the egg salad filling in between the two circles. Be careful not to squish the filling out.
Carefully place one or two lilac blossoms on the side of the hat sandwich, gently pressing each bloom into the egg filling.
Arrange on a plate or tiered tray for serving. If you would like to make these a few hours ahead, place the sandwiches in a container with a lid along with a layer of slightly damp paper towels. Refrigerate until needed.
