Old Fashioned Watergate Salad (Easy Pistachio Pineapple Fluff)

Spread the love

Fluffy, pale green, and unapologetically retro, old fashioned Watergate salad is the potluck dish people hunt down the minute they spot it. This easy pistachio pineapple fluff mixes instant pistachio pudding, crushed pineapple, whipped topping, and mini marshmallows into a creamy, no-bake side dish. Some people serve it as a dessert salad. It tastes like a church supper from your grandmother’s day.

This version came to me from my dear late mother-in-law, and now I’m sharing it with you. If you need easy salads for parties that stir together in minutes, this Watergate fluff salad is the one. If you’re also filling out a cold-salad spread, pair it with my Easy Potato Salad and Easy Ham and Pea Salad.

Why Is It Called Watergate Salad?

Nobody knows for sure. The origin of the name is obscure. Kraft says it developed the recipe as “Pistachio Pineapple Delight” in 1975, the year pistachio pudding mix came out, but didn’t call it Watergate Salad until consumers started requesting it by that name. The most popular theory is that it borrowed the name from Watergate Cake, another pistachio pudding recipe. Despite the legend, there’s no evidence the Watergate Hotel ever served it. Over the years it’s also gone by Pistachio Delight and Shut the Gate salad, plus “green fluff” and “green goop” in plenty of family kitchens. You can read more about it here.

Equipment Needed for Old Fashioned Watergate Salad

1 medium mixing bowl

1 can opener

1 mixing spoon

1 spatula for spreading and smoothing the salad for serving

1 mini chopper or regular food processor (if you want to do what I do, which is chop up pineapple chunks rather than use the crushed pinapple)

Ingredients for Old Fashioned Watergate Salad

1 can (20 ounces) crushed pineapple, drained, with the juice reserved. You can also use pineapple chunks run through a mini chopper food processor. (I prefer the chunks because they are easier to drain and reserve juice from than the crushed pineapple.)

1 box (3.5 ounces) instant pistachio pudding mix

1 container (8 ounces) whipped topping

1 cup mini marshmallows

1/2 cup chopped nuts of any kind (optional; I often leave them out)

Tip: If you don’t own a mini chopper, my post on clever kitchen tools for the busy, frugal cook has other time-savers.

Instructions for Old Fashioned Watergate Salad

In a bowl, combine the dry pudding mix and 4 tablespoons of the reserved pineapple juice. Stir well to make a soft paste.

Add the drained pineapple, whipped topping, marshmallows, and nuts (if using).

Mix until fluffy.

Cover and chill for at least 1 hour before serving.

Watergate Salad Variations

Nuts or no nuts: Pecans, walnuts, or even chopped pistachios all work. Skipping them keeps the texture soft and fluffy.

Ambrosia-style: Stir in shredded coconut, mandarin oranges, or maraschino cherries. If you love mandarin oranges, try my Delicious Berry Mandarin Tossed Salad too.

Add fruit: Diced apples or halved grapes add a fresh crunch.

Creamier: Fold in a little cottage cheese or softened cream cheese.

Fresh whipped cream: Whip your own cream in place of the whipped topping.

Holiday colors: Serve it in clear cups for Easter, the Fourth of July, or Christmas with festive toppings.

What to Serve with Watergate Salad

Pineapple and ham are a classic pair, so this salad is a natural next to a 3 Ingredient Ham Glaze dinner at Easter along with easy bread machine dinner rolls. It’s also a good fit with Easy Cola Chicken or on a Father’s Day picnic menu. For a retro dessert table, add Easy Old-Fashioned Gingersnaps or a Death by Chocolate Trifle.
