My Gourmet Chocolate Truffles Story

Years ago, when my boys were young, a friend from my high school days would come over to visit and we would experiment with fun recipes during the boys’ naptime. One of the experiments was a truffle recipe we had discovered. Most of the ingredients were easy to find, and the result was delicious. We made enough to give away and still had some left over for ourselves. For these gourmet chocolate truffles recipes, I use the same basic chocolate truffles recipe my friend and I made years ago, and adapt each recipe to fit each desired flavor. Read on for the easy homemade truffles recipes so you can make your own gourmet chocolate truffles!

Gourmet Chocolate Truffles Equipment

No matter which flavor of gourmet chocolate truffles you choose, you will need some basic kitchen equipment to make the process go smoothly. Here are the items:

1 scooper, size 100, which is the standard size for scooping the truffle filling

1 medium-sized heavy-gauge saucepan

1 cookie sheet (maybe 2, depending on the size of your truffles)

Plastic wrap

Aluminum foil

1 heat-resistant mixing bowl that will fit over a saucepan or a double boiler pot

Basic Gourmet Chocolate Truffles Ingredients

1 and 1/2 cups dark, milk, white or mint chocolate chips, chunks, or candy melts (depending upon the truffle flavor you are making)

2 tablespoons heavy cream

1 tablespoon butter

For coating the outside:

1 cup milk chocolate, white chocolate, or dark chocolate chips (this choice also depends on your chosen truffle flavor)

2 teaspoons shortening (I use butter-flavored Crisco)

A topping or decoration for each truffle to indicate the flavor (optional)

 

Basic Gourmet Chocolate Truffles Directions

In a heavy-gauge saucepan, combine dark chocolate chips, heavy cream, and butter. Cook over low heat, stirring constantly, until smooth. If you are adding a flavor or special gourmet ingredient, now is the time to stir it in. Note: If the oils from the chocolate and butter separate from the solids a bit, you can use a wire whisk or a whisk attachment on an immersion blender to blend the mixture back together, as shown in the video above. Once the optional ingredient has been mixed in, remove the saucepan from the heat. Cover with plastic wrap and freeze for 20 minutes.

Line a baking sheet with foil. Using the 100-sized scooper, drop scoops of the mixture onto the foil-lined baking sheet. No scooper? No problem! You could also drop teaspoonsful of the mixture onto the baking sheet, then shape into balls. Freeze until firm.

While the truffles are freezing, heat water in a saucepan. Place a mixing bowl over the hot (not boiling) water. Melt the chocolate chips and shortening, stirring until smooth.

Drop frozen truffles, one at a time, into the melted coating. Stir quickly to coat. Remove with a fork, shaking off excess coating. Place coated truffles on the cookie sheet. Decorate with an optional topping that will indicate which gourmet truffle flavor you have made, like shaved chocolate, finely chopped nuts, or a contrasting color of chocolate drizzle.

Chill coated chocolate truffles in the refrigerator until set. Store the chocolate truffles in the refrigerator. This basic recipe makes 18-24 truffles.
